Handpicked from selected parcels of their vines, this range of wine pays homage to Inigo of Loyola. Originally a mercenary, he turned from a life of violence to dedicate himself to helping others. Co-founder of the Order of Jesuits whose members would eventually found Sevenhill Cellars in 1851.
The aroma is clean and lifted with aromatic wild berries, hints of nettles and spearmint, all complexed with oak aromas of roasted chestnuts. The palate is elegant and finely structured, which is a hallmark of the 2017 vintage. Blackberry fruit flavours and fine emery tannins fill the length of the palate. A well balanced classically structured Cabernet Sauvignon.
