Brother John was the seventh Jesuit Winemaker at Sevenhill, a position he held from 1972 until his retirement from full-time work in 2003. The winery was established is 1851 by the Society of Jesus, a Catholic religious order commonly known as the Jesuits.
]]>Br John May SJ AM, the long-serving winemaker at Sevenhill Cellars in the Clare Valley, passed away peacefully on 18 August 2021 aged 92.
Brother John was the seventh Jesuit Winemaker at Sevenhill, a position he held from 1972 until his retirement from full-time work in 2003. The winery was established in 1851 by the Society of Jesus, a Catholic religious order commonly known as the Jesuits.
“John’s engagement across the cellars, St Aloysius’ Church, and in later years the on-site retreat centre characterised Br John’s deep commitment to an active, but contemplative and devotional, faith,” says Jesuit Provincial, Fr Quyen Vu SJ.
“John was so committed as a Jesuit to his mission in winemaking, which was unexpectedly entrusted to him.”
His ministry was very much as a Jesuit, offered to God with his Jesuit companions and friends. Fr Quyen recalls arriving at Sevenhill with a group of young Jesuits at the conclusion of a pilgrimage.
“We were all tired and weary, Br John was there to welcome us and took care of us like younger brothers in a family.”
Born in Sydney in 1929, as a child John was an altar boy at the Jesuit-run St Mary’s Church, North Sydney. After finishing school, he took up a carpentry and joinery apprenticeship. Following work in the building industry, he joined the Jesuits in 1949 at Loyola College, Watsonia in Victoria. He spent the next fourteen years there, performing various tasks and learning new skills through the Royal Melbourne Institute of Technology (RMIT).
His first assignment to the Jesuit winery at Sevenhill began in 1963, when he was sent to work with Br John Hanlon SJ. He was there for seven years.
It was Br Hanlon’s sudden death in 1972 that led to Br John’s recall to Sevenhill. After arriving, he asked that the interim appointment be made permanent to ensure the winery would survive. Returning to Sevenhill as Winemaker, without qualifications, he relied on his gifts with his hands and the fact that, in his words, he had spent his previous period there “with eyes and ears open.”
Over time he took courses in laboratory and cellar procedures at winemaking schools and was generously assisted by the local community of winemakers in the Clare Valley as he honed the craft.
Br John led the expansion of the Sevenhill vineyards, using the best clones of varieties suitable to the Clare Valley, and production grew from 80 tonnes to 500 tonnes per year by 1990.
Sevenhill’s Sacramental wine distribution expanded across Australia to countries throughout South-East Asia. The range of table wines was developed, and a Cellar Door established, attracting up to 40,000 visitors per year.
Br John’s passion for the Clare Valley was evident in his role as a founding member of the Clare Valley Vine Improvement Society and inaugural President of the Clare Valley Tourist Association, as well as memberships of a range of industry and community groups, including the Clare Valley Winemakers Association.
“This service to winemaking and the local community has been widely recognised,” says Jonathan O’Neill, the General Manager of Sevenhill Cellars.
“Brother John was inducted into the Clare Valley Hall of Fame in 2014 and received a Member of the Order of Australia (AM) in 2016 and became a lifetime member of the Wine Makers Federation in 2004, which is now called Australian Grape and Wine.”
After retiring from full time winemaking, Br John could be relied upon to prepare morning tea for the winery staff, to continue his care for St Aloysius’ Church, which is on the Sevenhill site, and to offer tours to visitors around the property.
Fr Quyen notes Br John’s vocation was, in his own words, “to offer my gifts and talents; my hands are to serve the Lord through the Society of Jesus”.
“Along with his deep faith, it was his engagement with community that was most important to him,” according to Mr O’Neill.
“What he would have been most proud of is what he did for the local community,” he says. “John May was a great man, one of the truly great gentlemen of the Australian wine industry and community, who will be sorely missed.”

]]>Located a mere 2-hour drive from Sydney’s Central Business District, the #HunterValley is a picturesque region with over 150 wineries, gastronomic delights and fun experiences for all ages. It is Australia’s oldest wine region with a rich history of viticulture stretching back nearly 200 years.
The first sighting of the Hunter River by European settlers was in 1797, when it was discovered accidentally by Lieutenant John Shortland while on a search for escaped convicts. The Hunter Valley’s initial value was as a source of timber and coal for steamships.

]]>Learn to prepare a Hearty meal this weekend with our Summer Seafood Stew Recipe!
A light and flavourful fennel-tomato broth with Chorizo. This can be made in 30 minutes! Serve with crusty bread to mop up all the juices or if going gluten free, sub cannellini beans for extra heartiness!
Ingredients:
– 200g crumbled Chorizo
– 2 cups finely diced Fennel (one large bulb)
– 1 cup finely diced Onion (half a large Onion)
– 4 Garlic cloves, smashed and roughly diced
– 2 tablespoons Tomato Paste
– 1 cup Dry White Wine
– 4 cups Chicken Stock (or a good fish stock)
– 1 teaspoon Fish Sauce (leave out if using fish stock)
– 2 medium Tomatoes- diced (or one can of diced Tomatoes and juices)
– 240g firm fish like Halibut, Talapia, Mahi Mahi, or Salmon
– 450g Mussels (or sub Clams)
– 450g large Prawns, raw, peeled and de-veined (or sub Scallops)
– ½ teaspoon Chili Flakes or Cayenne
– Salt and Pepper to taste
– ½ cup chopped Flat Leaf Parsley
– 1 Lemon
– Crusty Bread or 1 cup of Cannellini Beans
Method:
1.In a large heavy bottom deep skillet or Dutch oven, brown the chorizo in a little olive oil. (Remove from casing and break up or crumble into small bite-size pieces). Once browned, set aside. Pour off the fat, wipe out skillet with paper towel.
2. In same skillet, heat the olive oil on med-high heat. Add fennel, stirring often for about 3 minutes. Add onion, turn heat down to med and saute both until tender, about 8-10 minutes. Add garlic, sauté 3 minutes, stirring occasionally, until garlic starts turn golden. Add tomato paste. Turn heat up to high, constantly stirring, until paste darkens, about 3 more minutes. You are basically frying the paste to deepen the flavour of the dish.
3. Add white wine and turn heat down to medium-high, stirring until it cooks down by half, about 2 minutes. Add chicken stock, tomatoes, browned chorizo, and fish sauce and bring to a simmer.
4. Add salt and pepper to taste, and chili flakes. If using chorizo, the broth may be salty enough – each chorizo is different. Squeeze with half the lemon. Taste. You want the broth to taste rich and flavourful.
5. Add fish, simmer a couple minutes and add prawns, simmer a couple minutes, then add mussels. Remember the larger the prawns or mussels or fish pieces the longer they take to cook, so look at all your seafood ingredients and determine which will take the longest to cook, putting them in first.
6. Taste, adjust salt and lemon to your preferences.
7. Divide among bowls and Finish with the fresh parsley.

After a long and successful career in the Hunter mining industry, Joss and Anna De Iuliis were inspired to follow their family passion for wine and chose a property in the Lovedale Road region of the Lower Hunter Valley, converting a grazing property into a 20-hectare vineyard with the first vines planted in 1990.

Lavendelicious Liqueur by Gin Kitchen is perfect for cocktails, digestifs and even in desserts!
You’ll Need This:
- 30ml Gin Kitchen Lavendelicious Liqueur
- 15ml fresh lemon juice
- 1 tablespoon dried lavender buds
- Ice cubes, as needed
You’ll Do This:
1. Add Gin Kitchen Lavendelicious Liqueur and lemon juice to a cocktail shaker filled with ice.
2. Shake well and strain into a martini glass.
3. Garnish with a lemon slice and dried lavender sprigs and serve.
Tips for Taste:
1. Pairs fabulously with a slice of cake or your favourite dessert.
2. For a sweeter delight, rim the glasses with sugar and frost them in the freezer first.
A smooth liqueur delicately accented with hand-picked lavender from the Surrey Hills. English lavender is gently distilled in small batches. It is kept at a fairly high 30% vol. to avoid diluting cocktails.

You’ll Do This
1. Fill a 2 litre jug with ice.
2. Add the mint leaves, strawberries, orange and cucumber.
3. Add 100ml of Keepr's British Elderberry, Mulberry & Honey Gin and top with soda water or ginger ale.
4. As a guide there should be 1 part gin to 7 parts ginger ale/soda water.
